Ortega Green Chile Quesadillas

Green chiles, corn and shredded cheese make tasty quesadillas when time is short and one needs a healthy and delicious dish. Serve with green salad, steamy rice and pudding for dessert.

COMBINE cheese, chiles, corn and green onions in medium bowl. Spread 3/4 cup cheese mixture on one tortilla; place second tortilla evenly over mixture.

SPRAY skillet with nonstick cooking spray; place quesadilla in skillet. Cook each side over medium-high heat until golden brown and cheese is melted. Repeat with remaining ingredients. Serve with salsa and cilantro.

Comments: I first tried this recipe out of a magazine. I was skeptical about the corn but it added a different but great flavor. These are so easy and inexpensive to make. We make them on our George Foreman grill which makes them even easier. I would reccomend this to anyone. Everyone in our houes loves this dinner. Thanks Ortega

Comments: Very easy, quick and good. I grilled seasoned chicken breasts and used a different vegs like black olives and green onion and 2 kinds of cheese. It's fun to be creative with easy receipes like these
