     
Quesadillas make great snacks, party food or quick and easy meals. 4 12 min 10 min 
       - 1 tablespoon vegetable oil
- 1 cup sliced fresh mushrooms
- 1 cup red bell pepper strips
- 1 clove large garlic, finely chopped
- 2 cups torn fresh spinach leaves
- 4 (8-in.) soft taco-size flour tortillas
- 1 cup 4 cheese Mexican blend, divided
- 2 tsps. margarine or butter
- 1/4 cup ORTEGA Salsa - Thick & Chunky (Medium)
HEAT vegetable oil in large skillet over medium-high heat. Add mushrooms, bell pepper and garlic; cook, stirring constantly, for 1 to 2 minutes. Add spinach; cook just until spinach is wilted.
SPREAD half of mixture onto one tortilla; sprinkle with half of cheese. Place second tortilla evenly over mixture. Melt margarine in large skillet over medium-high heat. Place quesadilla in skillet; cook for 1 to 2 minutes on each side or until golden brown and cheese is melted. Repeat with remaining ingredients. Top with salsa.

I had to find something to make that didn't require baking. I put them all together early in the day and left them in the refrigerator. Cooked them just before the party and they were wonderful. I completely omitted the margarine and just sprayed the pan with cooking spray before putting the tortilla in. This has become a favorite summer dinner for us and I will take the recipe to the beach with us this summer and share it with my family.
