Create the Perfect Vegetarian Mexican Meal

 

Instead of a traditional Mexican meal, create a vegetarian south of the border meal. It is surprisingly simple and it’s so delicious that you will hardly miss the meat in these favorites. Full of spices and herbs, these dishes, give you options that are meat free or have been repurposed to meet the preference of your vegetarian guests.

Stuffed peppers         

Roasted peppers stuffed with beans, salsa and cheese is the perfect way to create a main dish or appetizer. This treat gives you a bit of heat along with creamy beans full of protein. Roast peppers over an open flame until slightly charred. Allow them to cool for a few minutes then slice in half and remove meat and seeds. Fill each half with pre-cooked pinto or black beans and top with cheese. Toss into a 425 degree oven and bake until cheese on top is melted. Then top with your favorite salsa and sour cream.

Homemade guacamole

Guacamole is the quintessential Mexican chip dip that is already completely vegetarian. Mash 4 ripe avocados into a bowl and add diced tomatoes, onion, salt and lemon or lime juice to taste. Vegetarian Nachos

It’s easy to transform traditional meat nachos to a vegetarian option. Top chips with your choice of beans and cover with your favorite nacho cheese. You can also layer it with shredded cheese and bake in the oven until cheese is melted. Top with lettuce, diced tomatoes, sour cream, salsa, jalapenos, and green onions. Your condiment list is practically endless when it comes to vegetarian nachos.

Spinach, green onion and mushroom quesadilla

Quesadillas are perfect for veggie lovers, especially for their versatility. Quesadillas are made from two tortillas with melted cheese inside. Quesadillas are usually already vegetarian, however dressing them up with some exciting ingredients makes for a wonderful meal that the whole family will enjoy. Add fresh spinach, chopped green onion and sautéed mushrooms to the inside of your quesadilla for a vegetarian twist on a Mexican favorite.
