Cornmeal and Corn Flour
Corn is central to Mexican cookery. White or yellow cornmeal and masa harina are both made from dried field corn rather than sweet corn, but the similarities end there. Cornmeal is simply ground, dried corn. To make masa, however, dried corn is boiled with pickling or mason’s lime to dissolve the outer hulls of the kernels. The corn is then rinsed thoroughly, and stone-ground into a paste (finely ground for tortillas and coarsely ground for tamales).
