Toasted pine nuts, barley and brown rice are combined in a warm and comforting pilaf that has an irresistible nutty flavor. Serve alongside pork or poultry for a perfect addition to your favorite meal.

Arizona Brown Rice Pilaf


  • 4 cups chicken broth
  • 4 tbls. butter or margarine
  • 1 clove garlic, finely chopped
  • 3/4 cups brown rice
  • 3/4 cups barley
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1/3 cup pine nuts, toasted
  • 1 tablespoon chopped fresh cilantro


COMBINE chicken broth, butter and garlic in medium saucepan; bring to a boil. Add rice and barley; reduce heat to low. Cook for 40 to 45 minutes or until tender. Add chiles, pine nuts and cilantro. Let stand, covered, for 5 minutes. Add salt and black ground pepper to taste.
