Baby Bean and Rice Burritos


1 can (15 ounces) pinto beans, drained
1 ORTEGA Soft Taco Kit – includes 10 soft tortillas, 1 package (1.25 ounces) taco seasoning mix and 1 package (3 ounces) taco sauce
2 cups cooked white rice
1 cup grated cheddar cheese


In a skillet, combine beans with taco seasoning packet contained in the soft taco kit. Heat on low and stir until well combined. Add the cooked rice to the seasoned beans and combine. Leave on warm as you make the burritos. Wrap the soft tortillas contained in the kit in a moist paper towel and heat in the microwave for one minute to make the tortillas more pliable.
To assemble the burrito, Place about 2 tablespoons of the beans and rice mixture along with a sprinkling of the cheese in the middle of a tortilla. Place the tortilla with the filling on a flat surface. Fold over both ends of the tortilla towards the middle of the tortilla and then flip up the side closest to you and carefully fold towards the middle of the tortilla. Fold the remaining side over the middle to create an envelope. Place the burrito folded side down on a platter and repeat with the remaining tortillas. Serve with the taco sauce included with the kit and an optional sprinkling of chopped cilantro.
