Baked Potatoes Ole




Bake potatoes in a hot oven until done-350 degrees for 1 to 1 1/2 hours. Meanwhile, cook chicken in 2 tablespoons olive oil in large frying pan, simmer-don't fry- till done-about 30 minutes or till no longer pink inside. Remove from pan, put on plate and slice crosswise into small pieces, return to pan. Add fresh garlic clove, and finely chopped onion. Now read directions on taco seasoning package and add and follow them. Simmer. When finished, turn off heat. Split baked potatoes and open wide and spoon a quarter mixture on each one. Top with a quarter of cheese mixture and black olive slices. Return to oven for few minutes to melt the cheese-350 degrees. Serve with sour cream, guacamole, raw onion and Ortega taco sauce- for everyone to add what they like.
