Balsamic Tomato Vinagirette


  • 2 ozs. REGINA Balsamic Vinegar
  • 1/2 cup extra virgin olive oil
  • 10 ozs. roma tomato, peeled, seeded
  • 1 tablespoon basil, fresh, snipped
  • 1 tablespoon chives, fresh, short cut
  • to taste kosher salt
  • to taste fresh-cracked white pepper


In a stainless steel mixing bowl, gently whisk olive oil into balsamic vinegar. Add diced tomatoes and blend with hand blender until mixed well and frothy. Add basil and chives, adjust seasoning with salt and pepper. Toss dressing with chilled salad greens or over oven-roasted vegetables.
