BBQ Salmon with Sesame Slaw

Ingredients

  • BBQ SAUCE:
  • 1/2 cup ketchup
  • 1/2 cup REGINA Red Wine Vinegar
  • 2 tbls. chili powder
  • 1/4 cup brown sugar
  • 2 tbls. honey
  • 1 teaspoon cumin
  • 1 teaspoon TRAPPEYS Red Devil Hot Sauce
  • 1 ounce worcestershire sauce
  • 1 teaspoon curry powder
  • 4 whole roma tomato, chopped
  • 1 whole red onion, diced
  • 1 ounce garlic, roasted
  • 1 whole Fresh Orange, diced
  • SESAME SLAW:
  • 1 whole 2 pounds green cabbage
  • 2 cups REGINA White Wine Vinegar
  • 1 cup water
  • 3 ozs. lime juice
  • 3 tbls. sesame oil
  • 1/2 cup sugar
  • 1 whole red bell pepper
  • 1 whole green bell pepper
  • 1 whole yellow bell pepper

Directions

BBQ Sauce:

In sauce pot, mix well first nine ingredients. Add garlic, onion and tomatoes. Bring to a boil, lower heat and simmer for 30-40 minutes. Strain and puree mixture in blender until smooth.



Sesame Slaw:



Slice cabbage and bell peppers and set aside in large mixing bowl. In medium sauce pan, bring to a boil the vinegar, water, lime juice and sesame oil. Remove from heat. Pour hot mixture over cabbage and peppers. Cover for 1 hour.



Serve with BBQ sauce over grilled salmon steaks, chicken breasts or beef filets.
