Using canned beans will deliver a fast and healthy meal in minutes.Leftover chicken or white rice would be a welcome addition to these satisfying burritos.

Bean Burritos

Ingredients

  • 2 tbls. vegetable oil
  • 1 cup tomato, cored and chopped
  • 1/4 cup chopped seeded green bell pepper
  • 1/4 cup chopped peeled onion
  • 2 ozs. diced green chile peppers
  • 1 garlic clove, crushed
  • 1/4 teaspoon salt
  • 1 can 15-oz. kidney beans, drained and mashed
  • 1/2 cup grated Monterey Jack cheese
  • 1/8 teaspoon hot pepper sauce
  • 6 flour tortillas
  • 1 cup ORTEGA Thick & Smooth Taco Sauce - Medium
  • 1/2 cup sour cream
  • 1 tomato, cored and chopped

Directions

Preheat oven to 350°F.

In a large heavy skillet, heat oil slightly over medium-high heat; add tomatoes, green pepper, onion, green chiles, garlic and salt until peppers are tender and onions are beginning to brown, 5 to 7 minutes. Add mashed beans, Monterey Jack cheese and hot pepper sauce; mix well.

Wrap flour tortillas in aluminum foil and heat in oven for 10 minutes.

Fill each tortilla with about 1/6th of bean mixture and roll. Top with taco sauce, sour cream, and tomato. Serve immediately.
