Beef and Mushroom Fajitas


  • 2 tbls. olive oil
  • 3/4 lbs. flank steak or top round, cut into 1/8x1x2-inch strips
  • 1/2 pound mushrooms, thinly sliced
  • 1 onion, peeled and thinly sliced
  • 2 tsps. chili powder
  • 1 teaspoon crushed dried oregano
  • 1 medium lime, juiced
  • 4 green onions, chopped
  • 8 small flour or corn tortillas, warmed
  • 1 cup ORTEGA Salsa - Homestyle Recipe (Mild)


Heat oil in a nonstick skillet over medium-high heat. Add beef and brown on both sides. Add mushrooms, onion, chili powder and oregano. Reduce heat to medium and cook, stirring often, until soft, about 4 minutes. Stir in lime juice and green onions. Season to taste with salt and pepper; mix well. Serve with warm corn tortillas and salsa.
