Serve these hearty squares on a bed of shredded iceberg lettuce and with a side of salsa and sour cream as an entrée, or cut into smaller pieces and serve as an appetizer.

Beef Tamale Squares


  • 1 package (8.5-oz.) corn muffin mix
  • 1 1/2 cup water
  • 2 large eggs
  • 1 tablespoon chili powder
  • 1/2 pound ground beef, cooked and drained
  • 1 jar (16-oz.) ORTEGA Salsa - Homestyle Recipe (Mild)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup frozen corn, defrosted
  • 1 cup shredded iceberg lettuce


PREHEAT oven to 450°F. Lightly grease 12 x 8-inch baking dish.

COMBINE muffin mix, water, eggs and chili powder in medium bowl; add beef, salsa, 1 cup cheese and corn. Place into prepared baking dish.

BAKE for 20 minutes; top with remaining cheese. Bake for an additional 5 minutes or until knife inserted near center comes out clean. Let stand for 10 minutes before serving. Serve over lettuce.
