Easy to fix and eat these bean and ham burritos employ lean pork and black beans to their utmost. Your family will love the satisfying taste of these hearty Mexican-style sandwiches.

Black Bean and Ham Burritos

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ham, cut into 1/2-inch dice
  • 1 can (14 1/2-oz) black beans, rinsed and drained
  • 4 large flour tortillas, heated
  • 2 cups cooked rice
  • 1 cup ORTEGA Salsa - Thick & Chunky (Medium)
  • 1 cup grated cheddar cheese

Directions

Heat oil in a skillet over medium-high heat. Add ham and cook until lightly browned, about 4 minutes. Add beans, heat thoroughly; remove from heat.

Place tortillas onto plates or a platter. Place 1/2 cup rice in a line down center of each tortilla. Layer with 1/4 of ham mixture and 1/4 of salsa. Top with cheese. Roll up and serve with extra salsa if desired.
