Blackberry Cream Cheese Cookies



1. Preheat oven to 350. Spray a baking sheet with non-stick cooking spray.

2. Beat margarine, cream cheese, vanilla and sugar in a bowl until


3. Mix in flour and salt until a soft dough is formed. Cover and refrigerate 2 - 3 hours.

4. On a lightly floured surface roll dough to 1/8 " thick; with a cookie cutter cut into

3" rounds. Place 1/4 teaspoon of preserves in center; fold in half and crimp edges.

With a sharp knife pierce top of each cookie.

5. Bake until lightly browned, about 8 - 10 minutes. Cool on wire rack. Makes 3 dozen.
