Blueberry & Baby Greens Salad with Goat Cheese Bruschetta


  • 12 ozs. baby spinach
  • 1 1/2 cup Blueberries, fresh
  • 1 whole small red onion, thinly sliced
  • 1/4 cup REGINA White Wine Vinegar
  • 2 tbls. olive oil
  • 2 tbls. orange juice
  • 2 tbls. sugar
  • 1 teaspoon Poppy Seeds
  • 1/2 teaspoon salt
  • 1/4 cup almonds or hazelnuts, chopped
  • 8 whole 4 ounce french bread, diagonal slices, toasted
  • 2 ozs. Goat Cheese


In a large bowl, toss spinach, blueberries, and onion. In a small bowl, whisk vinegar, oil, sugar, seeds, and salt. Pour dressing over salad, tossing gently to coat. Spoon salad onto four plates, sprinkle with nuts. Spread toast slices evenly with cheese. Top each salad with two bruschetta.
