Brer Rabbit Molasses Pumpkin Pie


  • 16 ozs. canned pumpkin
  • 1/2 cup light brown sugar, firmly packed
  • 1/4 cup BRER RABBIT Molasses, light or dark
  • 2 tsps. pumpkin pie spice
  • 1 teaspoon salt
  • 4 eggs, beaten
  • 1 1/2 cup milk or light cream
  • 1 9 inch pastry crust, unbaked
  • Whipped Cheese Topping (recipe below) or whipped cream, for garnish


In bowl, blend pumpkin, brown sugar, molasses, spice and salt. Beat in eggs and milk or light cream. Pour into prepared pastry crust. Bake at 400 degrees for 50 to 55 minutes or until pie is puffed and firm in center. Shield pie crust edges with foil during last 20 minutes of baking to prevent overbrowning. Serve warm or cold with Whipped Cheese Topping or whipped cream.
