Brer Rabbit Soft Carrot Nut Molasses Cookies


  • 1 cup sugar
  • 3/4 cups margarine, softened
  • 1/2 cup BRER RABBIT Molasses, light or dark
  • 1 egg
  • 1/2 cup vanilla-flavored yogurt
  • 2 3/4 cups all purpose flour
  • 2 tsps. baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup carrots, shredded
  • 3/4 cups walnuts, chopped
  • 3/4 cups raisins
  • 1 1/4 cup confectioners sugar
  • 2-3 tbls. water


In bowl, with mixer at high speed, beat sugar and margarine until creamy. At medium speed, blend in molasses, egg and yogurt until smooth. Combine flour, baking soda and cinnamon; stir into molasses mixture with carrot, walnuts and raisins. Drop dough by tablespoonfuls about 2 inches apart onto non-stick baking sheets. Bake at 375 degrees for 8 to 10 minutes of until lightly browned. Remove from baking sheet; cool on wire rack.

Blend powdered sugar and water until smooth. Drizzle icing over prepared cookies and sprinkle with additional chopped nuts. Makes 4 dozen.
