The spicy, savory filling for this hot sandwich can also be eaten over rice. Loaded with chopped tomatoes, peppers, chiles and cooked ham this sandwich is delicious and easy to handle.

Cajun-Style Tomato Pepper Pita


  • 1 tablespoon oil
  • 2 tomatoes, chopped
  • 1 cup chopped seeded green bell pepper
  • 1 cup chopped peeled onion
  • 1 tablespoon ORTEGA Diced Green Chiles
  • 1 clove garlic, peeled and crushed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup chopped cooked ham
  • 2 pita pockets, halved


Preheat oven to 375°F.

Heat oil in a medium non-stick skillet. Add tomatoes, green bell pepper, onion, green chiles, garlic, thyme, salt and red pepper flakes. Sauté, stirring occasionally, until green bell pepper and onions are tender-crisp (about 5 minutes). Stir in ham; heat thoroughly.

Divide mixture evenly among the pita pockets. Bake in oven until hot, about 5 minutes. Serve immediately.
