Caramelized Onion and Mushroom Quesadillas

Ingredients

2 large onions, sliced
8 large mushrooms, sliced
1 ORTEGA Soft Taco Kit - includes 10 soft tortillas, 1 package (1.25 ounces) taco seasoning mix and 1 package (3 ounces) taco sauce
2 cups Monterey Jack cheese, grated
1/2 cup sour cream
2 large onions, sliced
8 large mushrooms, sliced

2 cups Monterey Jack cheese, grated
1/2 cup sour cream

Directions

In a skillet, heat the sliced onions and mushrooms in 1 tablespoon vegetable oil. Continue cooking, stirring occasionally to prevent sticking, for about 8 minutes, until the onions are browned and mushroom liquid has evaporated. Add the packet of taco seasoning mix then remove the mushrooms and onions from the pan and place them in a bowl.

Lay the tortilla flat on a plate. Spread 1 tbsp of taco sauce on each tortilla. Evenly sprinkle with 1/4 cup of cheese. Top with the caramelized onions and mushrooms. Fold into half.

In a frying pan, place tortillas and heat each side for about 2-3 minutes or until the cheese melts and the tortilla is browned and crispy.

Cut into halves and serve hot with dollop of sour cream.
