Won ton skins can be used with just about any type of filling. Unless you're a purist, feel free to add anything you want. These cheese and chile-filled won tons are just the tip of the iceberg.

Cheese-Filled Won Ton Bites

Combine cheese and chiles in a small bowl. Place about 1-1/2 teaspoons of cheese mixture in the center of each won ton. Brush edges with water and fold in half to make a triangle.

Heat oil in a large skillet over medium-high heat until the temperature reaches 375°F (won tons should sizzle immediately on contact with oil). Cook until brown on both sides. Transfer to paper towels to drain. Serve warm.
