A great way to turn ordinary ingredients into a flavorful, unique meal! This recipe features easy prep and the usual wait for the rice to cook.

Chicken and Rice Picante


  • 1/4 cup flour
  • 3/4 tsps. seasoned salt
  • 1 pound chicken breasts
  • 2 tbls. oil
  • 29 ozs. whole tomatoes, chopped
  • 1 1/4 ounce ORTEGA Taco Seasoning Mix - Regular
  • 1 cup celery, sliced
  • 1/2 cup onion
  • 1/4 cup black olives, sliced
  • 1 cup rice
  • 1 cup water
  • 1/2 cup cheddar cheese, grated


Combine flour and seasoned salt. Add chicken breasts and toss to coat evenly.

In a skillet heat oil and brown the chicken. Add chopped whole tomatoes, taco seasoning mix, thinly sliced celery, chopped onion, sliced black olives, rice, and water. Bring to a boil, reduce the heat, cover, and simmer for 25 to 30 minutes, or until the rice is tender. Before serving, sprinkle with grated cheddar cheese.
