Chipotle Chicken Enchiladas



Preheat oven to 350°F. Lightly coat 13x9-inch baking dish with nonstick cooking spray. Spread 1/2 can enchilada sauce onto bottom of dish.

Combine chicken, 1 can enchilada sauce, beans and seasoning mix in medium skillet over medium-low heat. Cook and stir 3 to 4 minutes or until mixture is heated through.

Wrap tortillas with clean, lightly moistened cloth or paper towels. Microwave on HIGH (100% power) 1 minute, or until hot and pliable. Spoon chicken mixture evenly down center of each tortilla; roll up. Place in prepared dish, seam side down. Top evenly with remaining 1/2 can enchilada sauce and cheese.

Bake 15 to 20 minutes or until heated through and cheese is melted. Serve warm.
