Chorizo and Potato Tacos


1 lb. chorizo or hot Italian sausage, casing removed
1 medium yellow onion, thinly sliced
2 large cooked potatoes, diced
1 package (1.25 oz.) ORTEGA Taco Seasoning Mix (or 40% Less Sodium Taco Seasoning Mix)
3/4 cup water
4 cups shredded red cabbage
Juice of 1 lime
12 ORTEGA Taco Shells (any variety)
1 bottle (8 oz.) ORTEGA Taco Sauce (any variety)


1. Cook chorizo or sausage in a large skillet over medium heat for 8 to 10 minutes, breaking up and stirring occasionally, until cooked through. Remove and set aside.
2. In the oil remaining in the skillet, cook onion for 6 to 7 minutes, stirring occasionally, until tender. Add potatoes and cook for 3 to 4 minutes more or until heated through. Return sausage to the skillet and sprinkle with taco seasoning mix. Stir in water and cook for 3 to 4 minutes or until sauce thickens.
3. Toss cabbage with lime juice in a medium bowl.
4. Serve chorizo mixture in warmed taco shells and top with cabbage and taco sauce.

Makes 6 servings.
