Variation of traditional hard shell taco preparation without stinking up

Dad's Healthy Tacos

Ingredients

2 lb ground beef(Turkey OK for EXTREME healthy tacos)

1 lg potato,peeled,diced--frozen ok

2 jars ORTEGA SALSA - any

1 small onion chopped

1 dozen corn tortillas

Toothpicks

GARNISH:
Shredded lettuce
shredded cheese
chopped onion
chopped tomatoes
chopped olives

Directions

1.Pre heat oven 450 deg.
2.Brown beef with 1/4 of the chopped onion with MED heat until crumbled.Drain.
3. Put potatoes into microwave safe bowl with 2 cups warm water.Heat on HIGH for 5-6mins.Should cook taters halfway but no more.Drain.
4.Combine taters and one jar ORTEGA SALSA into skillet with browned meat.Heat on Med for 7 mins -stir often-then simmer for 15 min.
5.Warm corn tortillas according to pkg.
6. Spoon taco meat onto warmed tortilla.Fold tortilla in half and secure close with toothpick.Make as many as possible.
7. Place folde tacos onto cookie sheet.Place into oven for 7-10 mins until desired shell hardness is obtained.
***note***:
less meat can be used and then the tortilla rolled into flauta/taquito and baked at above directions.
