Use the whole canned Ortega chiles in a buttered glass pie plate, arranged to make a pie "crust", in a pinwheel pattern. Then, pour lightly beaten eggs over grated Monterey Jack Cheese, and bake at 350 degrees, serve with salsa on side for brunch

Eggs Monterey


2-4oz cans Ortega WHOLE chiles
Ortega mild salsa ( serve on side)
9 inch pie glass pie plate with light margarine/cooking spray.
Monterey Jack Cheese 2/3 lb, grated.
4 eggs, lightly beaten with fork


Preheat oven to 350 degrees
Spray glass pie plate throughly, or use paper towel to apply margarine.
Line pie plate with whole chiles. Rinse them one at a time, remove seeds, pat dry, with smooth side down, making a pinwheel pattern.
Distribute grated cheese evenly over bottom of pie plated.
Pour lightly beaten eggs over cheese.
Bake at 350 degrees about 20 minutes, until browning on top.
Serve with Ortega salsa on the side.
