Emeril's Kicked-Up Caesar Salad With Emeril's Original Essence And Emeril's Caesar Dressing


  • 2 cups stale french bread, cubed
  • 2 tbls. olive oil
  • 1 tablespoon EMERILS Original Essence
  • 3 heads romaine lettuce leaves, washed and dried
  • 4 ozs. EMERILS Caesar Dressing
  • Parmesan cheese, grated
  • (to taste) cracked black pepper
  • anchovy, optional


Preheat oven to 350 degrees F.

In a mixing bowl, place bread cubes, olive oil and Emeril's Original Essence and toss until thoroughly combined and seasoning is evenly distributed. Transfer seasoned bread cubes to a baking sheet large enough to hold bread cubes in one layer. Bake for 10 minutes, or until golden brown and crispy, being careful not to burn croutons.

In a large mixing bowl, tear lettuce into pieces, add Emeril's Caesar Dressing and toss until lettuce is evenly coated. Divide salad between 4 large plates and garnish with croutons, Parmesan cheese, cracked blacked pepper and anchovy (if desired). Serve immediately.

Makes 4 servings.
