Enchilada Casserole


1 1/2 lbs. ground chuck
1 1/2 packs of Ortega Taco Seasoning
2 lbs. of Ortega refried beans
12-16 oz of Sharp grated cheese (more if wanted)
1 pack flour tortillas
1 medium onion
1 10 oz can of Ortega enchilada sauce
black olives (optional)
green onions (optional)
tomatoes (optional)
shredded lettuce (optional)
8 0z sour cream


Brown ground chuck and drain;
add chopped onion, taco seasoning, and 3/4 cup of water;simmer 10-15 minutes; spray a 9x13 pan with PAM cooking spray; tear tortilla shells and layer bottom of pan until covered;add 1/2 meat on tortillas;then 1/2 beans; 1/2 cheese; follow layers again; top with enchilada sauce; sprinkle cheese, black olives, and green onions; cook for 20-30 minutes at 350 degrees; garnish with salsa, shredded lettuce, tomatoes,guacomole, and extra sour cream
