Fiesta Flats with Seared Tuna and Citrus-Papaya Salad


3 limes
2 cups diced fresh papaya
1/4 cup orange juice
1/4 cup chopped fresh cilantro
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes (or more to taste)
4 tuna steaks (about 4 oz. each)
1 package (1.25 oz.) ORTEGA Reduced Sodium Chili Seasoning Mix

1. Remove peel, including all white pith, from limes with a sharp paring knife. Cut segments free from membranes and finely chop segments. Repeat with remaining limes. Combine lime, papaya, orange juice, cilantro, salt and red pepper flakes in a medium bowl, creating a salad.
2. Coat both sides of tuna steaks with chili seasoning mix. Heat a large cast iron skillet over high heat. Sear tuna for 40 to 60 seconds on each side, cooking the outside but leaving the inside pink. Remove to a cutting board and cut the tuna into small cubes.
3. Arrange tuna in Fiesta Flats and top with citrus-papaya salad. Sprinkle lightly with red pepper flakes and serve immediately.

Makes 4 to 6 servings.
