Fiesta Quiche



Preheat oven to 375F. Press tortilla into 9-inch deep-dish pie plate. (If tortilla is cold, warm in microwave for several seconds so it will not tear when pressed into pie dish.) Sprinkle cheese over tortilla. In small skillet over medium heat, in hot oil, cook onion 10 minutes or until tender, stirring occasionally (do not brown). Layer onion and then jalapeno peppers over cheese. In bowl, whisk milk, eggs and oregano until blended; pour into pie dish. Bake 30 to 35 minutes until golden brown and center is set.

Makes 6 servings.
