Flat Iron Steak Tacos


    4    cups shredded red cabbage
    1/4    cup fresh lime juice (from 2 to 3 limes)
    1/2    teaspoon Polaner


*Also called top blade steak.

Combine cabbage, lime juice, garlic, salt and pepper to taste in medium bowl. Let stand 10 minutes (or refrigerate overnight).

Heat broiler to high; place rack 4 inches from heat. Line large rimmed baking sheet or broiler pan with aluminum foil. Sprinkle steaks with cumin; season with salt and pepper to taste. Place on prepared baking sheet.

Broil 6 to 8 minutes for medium-rare. Transfer steaks to plate; cover loosely with foil, and let rest 5 minutes. Thinly slice crosswise.

Wrap tortillas with clean, lightly moistened cloth or paper towels. Microwave on HIGH (100% power) 1 minute, or until hot and pliable. (Or hold each tortilla with tongs and lightly toast over low flame). Fill tortillas with steak. Top with cabbage slaw, cheese and salsa.
