Food Services - Las Palmas Mexican Green Chile Rice Casserole



Mix all ingredients, except 1½ cups Green Enchilada Sauce and the cheese, in a half pan. Cover tightly with foil. Bake @ 350 for approximately 50 minutes or until the rice is tender, stirring every 20 minutes or so during baking. When rice is done, remove the foil, drizzle with the extra green sauce, sprinkle with cheese, and return to the oven until the cheese is melted.
