Food Services - Smoked Chicken with Orange Sauce



1. In large non-metal bowl, combine orange juice, cooking sherry, soy sauce, mustard, orange peel, hickory seasoning, cayenne pepper sauce and garlic.

2. Add chicken to marinade, stirring to coat well. Cover; chill for 4 hours or overnight, stirring occasionally. Drain, reserving marinade.

3. Place chicken quarters on rack in roasting pans, Bake at 375 degrees for 45 to 50 minutes or until internal temperature reaches 185 degrees. Let stand for 10 minutes.

4. Meanwhile, place reserved marinade in saucepan. Heat to a boil; boil for 15 minutes. Keep warm.

5. To serve, per order; place 1 chicken quarter on serving plate. Ladle 1 ounce sauce over chicken; serve immediately.

6. Makes 12 servings.
