Grilled Cheddar Cheese Chicken Salad

Ingredients

  • 1 pound ground chicken or turkey
  • 2 tbls. corn oil
  • 2 cloves garlic, minced
  • 1/2 cup red onions, diced fine
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon worcestershire sauce
  • 6 cups green and red leaf lettuce, torn
  • 1 avocado, sliced
  • 12 cherry tomatoes
  • 1/2 cup black olives
  • 4 ozs. grated cheddar cheese
  • 1/4 cup REGINA Red Wine Vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon lime juice
  • 1/4 cup tomato juice, or puree
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Combine meat with garlic, onion, salt, paprika, pepper, Worcestershire sauce and grated cheese, and shape into 8 balls or 6 large patties. Place on broiler or grill and cook until internal temperature reaches 160 F., set aside. Combine lettuce, avocado, tomatoes and olives. Place remaining ingredients in blender for dressing and mix on high speed. Toss dressing with greens and top with chicken patties. Garnish with chopped green onions(optional).
