Grilled Moroccan Sea Bass

Ingredients

  • Charmoula:
  • 1 1/2 cup Parsely, fresh flat leaf
  • 1 1/2 cup fresh cilantro
  • 4 cloves garlic cloves, chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ACCENT Flavor Enhancer
  • 1/2 teaspoon salt
  • 1/3 cup extra virgin olive oil
  • 3 tbls. lime juice
  • Sea Bass:
  • 2 tsps. ground cumin
  • 2 tsps. salt
  • 1 teaspoon allspice
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ACCENT Flavor Enhancer
  • 1/2 teaspoon ground cloves
  • 1 1/2 pound sea bass fillets, skinned, but into 4 equal portions

Directions

Prepare barbecue grill to medium-hot for direct heat grilling and brush grill rack with oil. In a blender or food processor, pulse parsley, cilantro and garlic until finely chopped, but not pureed. Transfer to a bowl and add the next 7 ingredients. Set aside at room temperature. Combine the cumin and the next 7 ingredients. Rub over both sides of fish and place on grill rack (a grilling basket may also be used). Grill until fish flakes easily, 5 to 8 minutes. Transfer to serving dishes and spoon charmoula alongside.
