This zesty lasagne cuts out the fat by using non-fat cheeses. Kidney beans make this dish hearty. This is what's for dinner tonight.

Lasagna with Beef & Hearty Chili Sauce

Ingredients

  • 1 pound pinto beans
  • 1 1/2 pound lean round steak
  • 3 tomatoes, seeded and chopped
  • 1 large onion, peeled and chopped
  • 1 green pepper, seeded and chopped
  • 1 can (15-oz.) tomato sauce
  • 1 cup ketchup
  • 1 cup water
  • 3 tbls. ORTEGA Diced Jalape

Directions

For the Chili:  Rinse beans. Cover with water; soak overnight. Drain and place in a large saucepan. Cover with water. Add 2 quarts more water and cook for 2 hours. Drain; return to pot. 

Add steak, tomatoes, onion, green pepper, tomato sauce, ketchup, water, jalapeños, Worcestershire sauce, brown sugar, cumin and cayenne. Cook, covered, over medium heat for 1 1/2 hours. Remove meat and shred. Set aside. Season chili with salt to taste and cook until thick, about 30 min. more.

Preheat oven to 350°F.

For the Lasagna: Bring water to boil, add noodles, and cook until al dente. Plunge into cold water; drain. Spray a lasagna pan with vegetable spray and place a layer of noodles on bottom. Spread with half the meat and top with 1/3 of chili. Repeat process, start and end with noodles. Spread layer of chili over last noodle layer and sprinkle with cheeses. Bake, uncovered, 20 to 30 min., or until browned. Let lasagna sit for 10 min. before serving.
