Serve this light and refreshing rice salad at room temperature or chill for a cool accompaniment to your favorite spicy Mexican entrée. Tall glasses of iced tea with a twist of lime compliment the delicate lime flavor of the rice.

Lime Rice and Black Bean Salad


  • 4 cups cooked rice
  • 1 tablespoon lime juice
  • 2 cups diced fresh tomato
  • 1 can (15.5-oz.) black beans, rinsed and drained
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1/2 cup sliced green onion
  • 1 1/2 tablespoon chopped fresh cilantro
  • 1 1/2 teaspoon chili powder
  • 1 1/2 teaspoon ground cumin
  • 6 large lettuce leaves


COMBINE rice and lime juice in a large bowl. Add tomatoes, beans, chiles, green onion, cilantro, chili powder and cumin. Season with salt and ground black pepper.
Serve over lettuce leaves.
