Take your ordinary nachos and turn them into loaded chicken chili nachos with chunk chicken breast.
Loaded Chicken Chili Nachos
1 tablespoon olive oil
1/2 cup onion, diced
1/2 cup green pepper, diced
1 cup ORTEGA Black Beans, rinsed, drained
2 tablespoons ORTEGA Diced Jalapeno Peppers
7 ounces Chunk Chicken Breast
1/2 cup ORTEGA Salsa, any variety
1/2 cup ORTEGA Salsa con Queso
1/4 cup ORTEGA Sliced Jalapenos
1 box ORTEGA Taco Shells, broken, any variety
In a large skillet, heat the olive oil over medium heat. Add the onion and peppers and saute until wilted and slightly browned, about 5 minutes. Add the black beans, diced jalapenos, chicken in sauce and salsa. Stir to combine well and heat thoroughly for about 4 minutes.
Serve over a pile of taco shell pieces and top with warmed salsa con queso and sliced jalapenos.
