Low Fat Strawberry Cheese Cake (no bake)



1. In a small saucepan sprinkle gelatin over cold water; let stand 1 minute. Cook

over low heat, stirring constantly,2 minutes or until gelatin dissolves. Let cool.

2. Add sugar substitute to cooled gelatin.

3. In a blender combine cottage cheese, lemon peel and vanilla; cover and blend

until smooth. Gradually add gelatin mixture to cottage cheese mixture. Place this

mixture in a bowl and chill until slightly thickened, 10 minutes stirring


4. Combine graham cracker crumbs, melted margarine and 1 tablespoon sugar

substitute. Press crumb mixture firmly into a 9-inch pie plate.

5. Spoon cottage cheese mixture into prepared crust; chill 15 - 20 minutes.

Top with strawberries; brush with melted preserves.

Garnish with fresh mint.
