This simple salsa -- fresh mangoes marinated with lemon juice, spicy chile pepper and cilantro -- can be used as a dip or as an accompaniment for any grilled fish or chicken.

Mango Salsa


  • 2 mangoes, seeded, peeled and diced
  • 2 jalape


Combine mango, jalapeño and cilantro; mix well. Add lime juice and olive oil; serve immediately.

Makes abut 2 cups.

NOTE: Capsaicin is the ingredient in chiles that causes the burning sensation associated with fresh peppers. It's a good idea to use rubber gloves when handling fresh chiles. If you choose not to use gloves, be extremely careful not to touch any part of your body, especially your eyes. After you're done, wash your knife and cutting board with hot soapy water to ensure that there is no carry-over to other foods that may come in contact with the peppers.
