Maple Glazed Yams With Orange And Cranberries


  • 4 3/4 lbs. yams, peeled and cut into 1 inch pieces
  • 3/4 cups MAPLE GROVE FARMS Pure Maple Syrup
  • 1 1/2 teaspoon orange zest
  • 6 tbls. dried cranberries
  • 2 tbls. parsley, fresh chopped


Preheat oven to 350F.

Cook yams in large pot of boiling salted water 3 minutes.

Drain; transfer to 13x9x2-inch glass baking dish.

Blend syrup, butter and orange zest in small bowl; pour over yams.

Sprinkle with salt, pepper and dried cranberries; toss to coat.

(Can be made 1 day ahead. Cover and refrigerate)Garnish with parsley before serving.

Cooking time: 60 minutes.
