Marinated Tomato Salad


  • 1/4 cup REGINA White Wine Vinegar
  • 3 tbls. salad oil
  • 1 tablespoon Dijon mustard
  • 3/4 tsps. dried basil leaves
  • 1 whole garlic, crushed
  • 1/2 teaspoon black ground pepper
  • 1 quart fresh tomatoes, cut into wedges
  • 1 cup cucumber, peeled, seeded, and sliced
  • 1 cup mushrooms, sliced
  • 1/2 cup radishes, sliced


In large bowl, whisk together vinegar, oil, mustard, basil, garlic and pepper. Add tomatoes, cucumbers, mushrooms and radishes, tossing to coat well; cover. Refrigerate 3 to 4 hours, stirring occasionally. Store, refrigerated, up to 3 days.
