Marinated Vegetable Medley

Ingredients

  • 1/3 cup REGINA White Wine Vinegar
  • 1/3 cup salad oil
  • 1 teaspoon sugar
  • 1/2 tablespoon Dijon mustard
  • 1 tablespoon onion
  • 2 tsps. Poppy Seeds
  • 2 cups cauliflower, cut into bite-sized pieces, blanced
  • 2 cups broccoli, cut into bite-sized pieces, blanced
  • 2 cups carrots, angle-cut 1/2 inch thick and blanched
  • 2 cups zucchini, sliced 1/4 inch thick
  • 1 cup cherry tomatoes, sliced in half
  • 1/2 cup scallions, sliced 1/2 inch thick

Directions

In large bowl, whisk together vinegar, oil, sugar, mustard, onion and poppy seed until well blended. Add cauliflower, broccoli, carrots, zucchini, tomatoes and scallins, tossing to coat well; cover. Refrigerate 6 hours or overnight, stirring occasionally. Store, refrigerated, up to 4 days.
