Mediterranean Fish


  • 1 onion, sliced
  • 2 tbls. olive oil
  • 1 garlic clove, crushed
  • 1 can stewed tomatoes
  • 4 tbls. ORTEGA Salsa - Thick & Chunky (Medium)
  • 1/4 teaspoon cinnamon, ground
  • 1 1/2 pound red snapper
  • 12 green olives, sliced


In a microwave-safe dish, combine sliced onion, olive oil, and crushed garlic clove. Cover and microwave on high for 3 minutes. Drain. Stir in stewed tomatoes, salsa, and cinnamon. Top with red snapper and sliced green olives. Cover and microwave on high for 3 to 4 minutes or until the fish flakes easily with a fork.
