Home-made tortilla chips or fresh veggie sticks next to a bowl of this dip is a party waiting to happen; just add people!

Melted Cheese Dip (Dip de Queso Fundido)


  • 4 cups four cheese Mexican blend shredded cheese
  • 3 tbls. all-purpose flour
  • 1 cup non-alcoholic beer
  • 1 can (4-oz.) ORTEGA Diced Green Chiles
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper


COMBINE cheese and flour in large bowl. Bring beer to boil in medium, heavy-duty saucepan. Reduce heat to low.

ADD cheese mixture, 1/2 cup at a time, stirring constantly until cheese is melted. Repeat with remaining cheese; stir until thickened. Do not boil.

STIR in chiles, cilantro, salt and pepper. Pour immediately into 8-inch baking dish.

SPRINKLE with jalapeños and drizzle with taco sauce, if desired. Serve immediately or keep warm in oven. Serve with tortilla chips.

Makes 3 cups.
