I love this recipe because you can prepare it ahead when you know you're going to be busy and toss it in the oven right before serving.

Mexican Casserole


1 lb. ground beef
taco seasonings
refried beans, 2 cans
1 can Cheese soup
taco shells
1 cup american cheese
1 cup mozerella cheese
sour cream, optional


Brown beef and drain. Add taco seasonings and let simmer. Drain. In a 9 x 13 pan, spread refried beans evenly. Spread beef mixture in top. Next, layer with salsa and both cheeses. Bake at 350 degrees for 30 to 40 minutes. Serve with taco shells. Can garnish with a little sour cream, if desired.
