Mexican Cheese Pie


  • 6 (10-inch) flour tortillas
  • 1 onion, peeled, sliced
  • 1 tomato, chopped
  • 4 ozs. green chili peppers, seeded, diced
  • 1 cup grated cheddar cheese
  • 3 eggs
  • 1/2 cup 2% milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 3/4 cups ORTEGA Thick & Smooth Taco Sauce - Medium


Preheat oven to 350°F. Spray a 8x8-inch baking dish with vegetable cooking spray. Cover bottom of dish and sides with a layer of flour tortillas. Top with onion, tomato, green chili peppers and cheddar cheese. Reserve.

In a bowl, combine flour, baking powder, salt, milk, and eggs; stir until smooth. Pour into the baking dish. Bake for about 40 minutes. Garnish with sliced avocado. Serve with taco sauce.
