A fast and easy pork chop recipe for two people.

Mexican Pork Chops


2 pork chops, 3/4- to 1-inch thick, preferably boneless
1/2 envelope dry taco seasoning
1 8-oz can tomato sauce
3/4 cup rice, not instant
1-1/2 cups water
1/2 cup shredded cheddar cheese
green pepper rings, optional


Brown chops on both sides. Place in a 9 x 13 casserole dish that has been sprayed with vegetable spray. Add the rice to the other side of the dish. Combine the tomato sauce, water, and taco seasoning. Pour over rice and chops. Cover dish with foil and bake at 350 degrees for 1 hour. Remove from oven. Sprinkle chees and pepper slices over chops and rice. Cover and cook an additional 10 minutes. Serves two with leftover rice.
