Mexicorn Bake


  • 1 pound ground beef
  • 1 green bell pepper, seeded and chopped
  • 1 packet ORTEGA Taco Seasoning Mix - Regular
  • 3/4 cups water
  • 1 can corn soup
  • 1/4 cup 2% milk
  • 1 package refrigerated biscuits
  • 1/2 cup cheddar cheese, grated


In a large skillet, cook ground beef with green bell pepper; drain. Add taco seasoning mix and water. Simmer for 5 minutes. Pour into a 1-quart casserole. Add corn soup and milk and thoroughly combine everything together.

Preheat oven to 375°F.
Bake for 10 minutes. Remove from the oven and stir. Open refrigerated biscuits and slice in half. Place the cut side down on top of meat mixture and sprinkle grated cheddar cheese over the top. Return to the oven and bake for 15 minutes or till the biscuits are browned.
