These Enchiladas are great.

Mild Cheesy Chicken Enchiladas


2 Cups of cooked chicken (cubed), 1 Tbsp chopped onions, 4 Cups shredded cheddar cheese, 1 Cup sour cream, 8 Flour tortillas, 1 Jar salsa (14 oz.)


Preheat oven to 350. In a medium bowl combine the chicken, onion, 1 cup of cheese and 3/4 cup of sour cream. Place the mixture evenly among the 8 tortillas and roll them tightly. Place them in a lightly greased 9x13 baking dish in a single layer. In a microwave melt the remaining cheese and sour cream, then pour it over the rolled tortillas and top with the salsa. bake for 20-30 minutes or until hot and bubbly.
