Myrna's Southwest Rice


  • 3 cups uncooked rice
  • 1 pound ground buffalo or turkey
  • 1 medium onion, peeled and chopped
  • 2 cans (14.5-oz.) tomato sauce
  • 1 can (14.5-oz.) stewed tomatoes
  • 1 packet ORTEGA Taco Seasoning Mix - Regular
  • 1 teaspoon salt
  • 4 cups shredded cheddar cheese


Preheat oven to 400°F.

Cook rice according to package directions.

Meanwhile, brown ground meat and onion in a large skillet; drain. Add tomato sauce, tomatoes, taco seasoning and salt to skillet and bring to a boil. Reduce heat and stir in cooked rice. Simmer for 5 minutes to blend flavors.

In a large baking dish, alternate rice mixture with cheese, ending with cheese. Bake in oven until cheese is melted and bubbly about 15 minutes. Serve warm.
